A festive Belgian pale ale, Saison de Noël is a mix of dark fruits and scents of tangerine decorated by notes of fresh biscuit and a hint of spice. Trappist yeast contributes vivid, ripe flavors of strawberry, lychee and enchanting summery air.
Brimming with rich Belgian esters and pleasant caramel sweetness, a strong malty backbone hides the well-behaved 6.1% ABV. Light aromas of coriander and orange zest are nicely balanced by the distinct character of Belgian yeast.
Notes of tangerine, clove and white pepper offer depth and complexity. Saison de Noël strikes a crowd-pleasing balance between complex malts and spicy hops, with a touch of alcohol that warms on the finish. Brewer's Note: You may wish to add up to 1/2 ounce crushed coriander and the zest of 2 oranges at flameout for a "Saison de Noel Blanche". Also note that Belgian Abbey is a notoriously slow starter, so it is normal to see a longer lag phase.
