The uniquely Italian version of the well known Pinot Gris grape, picked earlier in Italy than in all other regions and well before its characteristic loss of acidity at ripening, for a bright, crisp, dry white wine with a gentle perfume and a detectable spiciness. Fresh, fragrant and lively, its flavors include a certain flintiness with hints of citrus and almonds.

Excellent ferment and clearing

Followed kit instructions through the racking and de-gassing. Fermentation was complete in 10 days to .994.
Second racking at 5 weeks and will bulk age for 4-5 months then bottle. t the second racking went from 6 to 5 gallon carboy and bonus 4 bottles to rest for a month. The wine now is very smooth with subtle notes of grapefruit.
