Great saison

I have brewed this kit twice, once with Wyeast 3711 and once with Wyeast 3724. The flavor profile is more simple with 3711 and more complex with 3724, but the fermentation is more complex with 3724. 3711 is a fermentation beast and will knock this kit out in short order, but 3724 will stall for a while if you don't take some steps to prevent that, such as cranking the temp up to 90 or so and I also removed the lid from my Ss Brewtech bucket and replaced it with a sanitized piece of aluminum foil. It fermented out just as dry as 3711 after taking those steps and had no stall. Either way, the beer from this kit is fantastic!

Considering the fermentation and bottling time is over 6 weeks it’s a little early to be asking me if I like it.
